I am not feeling too hot today. Luckily on Tuesdays I work from home so I was able to get some work done while in the comfort of my p.j.’s. The flu is going around and I am praying that I am not getting it as we leave for Thailand in 2 weeks today. But I guess it would be better to get it now and not while we are away on our honeymoon.
The husband was feeling bad for me so he surprised me with this beauty:
For dinner we had a bowl of soup and while I was cleaning up I came across these:
This called for some yummy banana bread. So I went to my tried and true recipe that is flourless, delicious and pretty healthy too.
First the ingredients call for:
-oatmeal
-baking powder
-cinnamon
-salt
-maple syrup
-eggs
-butter
-ripe bananas
-greek yogurt
-vanilla extract
-chocolate chips (optional)
Now in order to make “oat flour” all you have to do is throw oats in a food processor or blender and mix until fine and voila oat flour is born. It is a great flour-free option and high in fibre. To make this gluten free look for oat brands that specifically label theirs as gluten free. This means there has been no cross contamination with wheat during the harvesting, storing or packaging process.
The next step is to mix 2 cups of oat flour with the baking soda, cinnamon and salt.
In another bowl mix the eggs and maple syrup until light and fluffy.
Add in melted butter, mashed bananas, greek yogurt and vanilla. Mix well.
Beware of hungry dogs!
Gently mix dry ingredients with wet ingredients.
Fold in chocolate chips
Pour into lined or lightly buttered bread pan and bake at 350 degrees (F) for 1 hour
Voila!
Flourless Maple Banana Bread
2 cups oat flour
1 teaspoon baking Soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup maple syrup
2 eggs, room temperature
1 stick unsalted butter, melted
4 very ripe bananas, mashed
2 tablespoons greek yogurt
1 teaspoon vanilla extract
1/2 cup of chocolate chips (optional)
Preheat oven to 350 degrees (F). Line the bottom of a loaf pan with parchment paper and spray with non-stick spray.
In a medium bowl, sift together the oat flour, baking soda, cinnamon and salt, set aside. In a separate large bowl, beat maple syrup and eggs with a whisk until light and fluffy, about 5 minutes. Add melted butter. Add mashed bananas, Greek yogurt, and vanilla. Gently mix in dry ingredients. Fold in chocolate chips (optional). Pour batter into lined or buttered loaf pan and bake for about 1 hour.

One thing – for oats to be gluten free they have to be specifically marked as such. Otherwise if they’re just your average package, they often contain gluten from cross-contamination with wheat. Just thought I’d mention it in case a celiac comes around and wants to try your recipe (like me

I tried this with dark chocolate chips — and it turned out amazing! Have you ever done it with substituting applesauce in place of the butter?
I have not tried it with applesauce in place of butter in this recipe, but I have done it with cookies. Something I will have to try!
